Black Urad Dal Paniyaram and Kara Chutney
Paniyaram, also known as khuzhi paniyaram, is an all-time favourite snack that can be served at breakfast or at evening tea with a spicy chutney.
The savoury paniyaram given here is made healthy by adding black urad dal which is said to improve muscle strength and nourishment.
Ingredients:
For the Paniyaram:
- Raw rice – 1 cup
- Idly rice – 1 cup
- Black urad dal – 1 cup
- Sago/Javarisi – ½ cup
- Fenugreek – ½ tsp
- Chopped onions – 1 cup
- Green chillies as required
- Few curry leaves
- Salt as required
For the Kara Chutney
- Onion, medium size – 1
- Tomato, large – 1
- Garlic – 4 cloves
- Red chillies – 6
- Mustard seeds and curry leaves for tempering
- Salt as required
Method:
For the Paniyaram
- Wash raw rice, idly rice, black urad dal, sago and fenugreek together.
- Soak in drinking water for 4 hours.
- Grind to a smooth idly batter consistency.
- Add salt.
- Allow to ferment for 2 to 3 hours.
- Now, the batter is ready to be used.
- Add chopped onions, chillies and curry leaves to the batter.
- Mix and pour into the pits of a paniyaram pan that has been slathered with oil.
- Cook on both sides and serve hot with kara chutney.
For the Kara Chutney
- Grind onion, tomato, garlic cloves and red chillies with salt.
- Add oil to a tempering pan. Temper with mustard seeds and curry leaves and pour hot over the chutney and serve.
