Tasty Broccoli Soup for the Upcoming Monsoon!

Creamy Broccoli Soup

Broccoli is a low-calorie vegetable that is packed with nutrients and antioxidants. It is extremely beneficial to health and making it a part of our diet is highly recommended.



  • Fresh chopped broccoli florets – 2 cups
  • Onion, chopped – 1
  • Garlic, chopped – 4 cloves
  • Milk – 1/2 cup
  • Butter – 2 tbsp
  • Almonds – 5
  • Salt and pepper according to individual taste


  • Wash the broccoli florets and drop them into a bowl of hot water.
  • Blanch for 15 to 20 seconds. Then, drain all the water.
  • Heat 2 tablespoons of butter in a saucepan.
  • Add ¼ cup of chopped onions and ¼ or ½ teaspoon of chopped garlic.
  • Add the blanched broccoli.
  • Add 2 cups of water.
  • Add the almonds.
  • Cover with a lid and simmer on low to medium-low heat until the broccoli is tender (about 6 to 7 minutes).
  • Switch off the flame and allow it to cool.
  • Once cooled, blend in a mixer to a creamy consistency.
  • Transfer to a saucepan and add 1/2 cup of milk.
  • Add the required quantity of salt and pepper powder.
  • Gently heat soup (do not boil) and serve.

Garlic Masala Puffed Rice

This is a simple snack that you can make in a jiffy and carry around with you when you’re on the move. It is tasty, helps avoid junk food and is made with regular pantry ingredients.


  • Puffed rice – 5 cups
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Peanuts – ¼ cup
  • Crushed garlic cloves – 2-3
  • Turmeric powder – ¼ tsp
  • Red chilli powder – 1 tsp
  • Sugar – ½ tsp
  • Salt to taste
  • Oil – 2-3 tbsp


  • Firstly, dry roast the puffed rice in a pan on low heat until it becomes crispy and crunchy. This takes about 2-3 minutes. Cool them completely.
  • Heat oil in a pan on medium flame. Add mustard seeds, and cumin (jeera) seeds, and let them splutter.
  • Then, add raw peanuts and roast.
  • Add crushed garlic and sauté for 1-2 minutes.
  • Turn off the heat. Add turmeric powder, red chilli powder, sugar, and salt. Mix well.
  • Next, add the roasted puffed rice and toss until well combined.
  • Your tasty snack is now ready to serve!
