Roasted Garlic Broccoli and Cauliflower

Oven roasted broccoli and cauliflower with parmesan and garlic is a quick and easy recipe. It makes a good snack or a tasty accompaniment to your meal. The crispy edges make you go for a second serve. This low carb, gluten free recipe is a healthy, nutritious recipe to frequent your dinner table more often than you think! Enjoy!


  • 4 cups Broccoli (florets)
  • 4 cups Cauliflower (florets)
  • 1/4 cup Olive oil
  • 6 cloves Garlic (minced)
  • 2/3 cup Parmesan cheese (divided)
  • Salt and black pepper to taste


  • Preheat the oven to 400 degrees F. Line a large baking sheet with foil or parchment paper.
  • Mix the broccoli and cauliflower florets in a large bowl. Add the olive oil, garlic, and half of the parmesan cheese. Toss to coat. Sprinkle with sea salt and black pepper and toss well.
  • Arrange the veggies in a single layer on the pan giving them plenty of room to breathe. Bake for 15-20 minutes*, until the edges are browned.
  • Toss with remaining parmesan cheese, and sprinkle with additional salt & pepper to taste if desired, before serving.
  • * Toss halfway through for more even cooking – optional but works better
