Diet. It's the scariest four letter word I know. Absolutely no fun at all. But, of course I would die to be in shape and fit into my old jeans. So how can I eat what my tongue craves, and also not put on weight?
I love to experiment in the kitchen, and this recipe is one such find. Who doesn't love pizza? Slice of heaven. But it is accompanied by the nagging worry of how many calories you would put on, and how long you need to run on the treadmill afterward to lose it! Now, there is a way to have your slice of heaven without guilt.
I substituted flour with pulsed cauliflower, which acts as a pizza base. One serving of cauliflower contains 77% of the recommended daily value of vitamin C. It is also an excellent source of vitamin K and other important minerals. Cauliflower even ranks among the top 20 foods in regards to ANDI score (Aggregate Nutrient Density Index), To earn high rank, a food must provide a high amount of nutrients for a small amount of calories.
There are 84 calories in one slice of cauliflower pizza. Calorie breakdown: 54% fat, 13% carbs, 33% protein.
Note: You can reduce the quantity of cheese in the pizza base if you are really watching your calories. The crust comes out really well even with bare minimum cheese.
