Stuffed Brinjal

Boost your overall health by eating Brinjal also called Aubergines. This vegetable is loaded with antioxidants and anti-inflammatory compounds. Method:

In a little oil roast the coariander seeds, dals, chillies. Keep aside. Dry roast the coconut. Keep aside. Grind this into a coarse powder. Add chopped onions as well as tamarind paste and salt and coarsely grind. Now the masala is ready.

Wash brinjals, Make slits from the top keeping the stalks intact. Stuff this masala and allow to marinate for half an hour.

In a wide kadai add oil, add the stuffed brinjals and cover and cook. Sprinkle water after 5 minutes. This will take about 20 minutes. Remove from flame when brinjals are totally cooked. Serve hot with steamed rice.
