Having chia pudding for breakfast is a wonderful way to start your day as this healthy breakfast is not only creamy and tasty but also packed with protein, fibre and omega-3 fatty acids. This recipe is extremely simple requiring only 2 ingredients – chia seeds and milk. You can replace normal milk with any milk of your choice (like coconut milk). Feel free to experiment with this recipe and add other toppings according to your preference.
Chia seeds – 4 tsp
Coconut milk/Any milk – 1 cup
Strawberries – 5
Dates, seedless & chopped finely – 2
Honey – 1 tsp
Nuts (chopped almonds, walnuts, etc.) or sunflower seeds as toppings
Combine the chia seeds and milk in a bowl.
Set this mixture in the fridge for a couple of hours or even overnight if possible.
If the chia pudding isn’t thick enough, increase the chia seeds content and let the mixture sit a bit longer (say 1/2 an hour).
Top it up with honey, cut strawberries (mangoes or any seasonal fruits), dates and chopped nuts.
Serve straight away.
