Vegetable Barley Soup

Barley is a very healthy grain. Packed with nutrients, barley has a nutty flavour which makes it an easy addition to many dishes. It is good for heart health and aids in digestion and weight reduction too.

This vegetable barley soup is a healthy, filling, low fat and low calorie one pot meal.



  • Pearl barley – 3/4th cup
  • Butter – 2 tbs
  • Garlic cloves, finely sliced – 4
  • Spring onions or shallots, chopped – 10
  • Carrot, finely chopped – ½ cup
  • Beans, finely chopped – ½ cup
  • Mushroom, thinly sliced – 1 cup
  • Pepper powder, salt and soy sauce – according to individual taste
  • Finely chopped coriander leaves for garnish


  • Wash the pearl barley and pressure cook in 4 cups of water for 3 to 4 whistles.
  • Once cooled, open the lid and take one ladle of cooked barley and grind to a fine paste in a mixer jar. Keep aside.
  • Add butter to a sauce pan and fry the sliced garlic, chopped onions and all the chopped vegetables.
  • Sauté over medium heat.
  • Pour the cooked barley along with the water and allow it to boil.
  • Add salt to taste.
  • Add the ground barley paste.
  • Mix well.
  • Cook for another 5 minutes.
  • Garnish with coriander leaves.
  • Add pepper and soy sauce while serving.
