Vegetable Barley Soup
Barley is a very healthy grain. Packed with nutrients, barley has a nutty flavour which makes it an easy addition to many dishes. It is good for heart health and aids in digestion and weight reduction too.
This vegetable barley soup is a healthy, filling, low fat and low calorie one pot meal.
Ingredients:
- Pearl barley – 3/4th cup
- Butter – 2 tbs
- Garlic cloves, finely sliced – 4
- Spring onions or shallots, chopped – 10
- Carrot, finely chopped – ½ cup
- Beans, finely chopped – ½ cup
- Mushroom, thinly sliced – 1 cup
- Pepper powder, salt and soy sauce – according to individual taste
- Finely chopped coriander leaves for garnish
Method:
- Wash the pearl barley and pressure cook in 4 cups of water for 3 to 4 whistles.
- Once cooled, open the lid and take one ladle of cooked barley and grind to a fine paste in a mixer jar. Keep aside.
- Add butter to a sauce pan and fry the sliced garlic, chopped onions and all the chopped vegetables.
- Sauté over medium heat.
- Pour the cooked barley along with the water and allow it to boil.
- Add salt to taste.
- Add the ground barley paste.
- Mix well.
- Cook for another 5 minutes.
- Garnish with coriander leaves.
- Add pepper and soy sauce while serving.
