One Pot Rasam Rice

This one-pot rasam rice is a very convenient and easy recipe. With ingredients like garlic and cumin, rasam rice is always a go-to when we are confronted with digestive issues.
Ingredients
For Soaking
- Rice – 3/4th cup
- Toor dal – 2 tbs
Soak the above for 30 minutes.
For the Crushed Mixture
- Pepper – 1 tsp
- Cumin seeds – 1 tsp
- Curry leaves – 5
- Dried chillies – 3
- Garlic – 6
Crush the above ingredients into a coarse mixture. A mixer can be used if a mortar and pestle set is not available.
For the Cooker
- Oil – 3 tbs
- Mustard seeds – 1 tsp
- Curry leaves – 10
- Dried chillies – 2
- Tomatoes, chopped – 2 or 3
- Turmeric powder – 1/2 tsp
- Rasam powder – 2 tbs
- Tamarind juice squeezed from a lemon-sized tamarind that has been soaked in 1/4th cup of water
- Salt – 1 tsp
- Chopped coriander leaves for garnish
Water for rice – 5 times the rice quantity (3/4th cup × 5 times). Omit/adjust chillies according to individual taste.
Method
- Add oil to a cooker.
- Once the oil is heated, add mustard seeds, the crushed mixture, curry leaves and dried chillies and sauté.
- Add chopped tomatoes and cook until soft and mushy.
- Add turmeric and rasam powder and mix well.
- Add tamarind juice.
- Add soaked dal and rice.
- Add water, salt and mix well.
- Close the cooker cap and wait for 4 to 5 whistles.
- Once cooled down, open and add chopped coriander leaves and mix well.
- Serve hot with appalam!
