Horse Gram Soup/Kollu Soup

Kollu soup offers numerous benefits, including weight management, blood sugar control, and improved digestion due to its high fibre and protein content, and low glycemic index. It also supports heart health by lowering bad cholesterol.
Rich in antioxidants, kollu soup helps fight free radicals and protects against chronic diseases.
The soup contains calcium and phosphorus, which are important for bone health. It also provides sustained energy due to its protein and carbohydrate content.
Ingredients
- Horse gram (kollu) – ½ cup
- Medium onion – 1
- Medium tomato – 1
- Garlic cloves – 4
- Peppercorns – 1 tsp
- Cumin (jeera) – 1 tsp
- Red chilli – 1
- A few curry leaves
- Salt to taste
Method
- Wash and soak the horse gram for 15 minutes.
- Drain water and dry roast.
- Add the roasted horse gram and all the ingredients listed above to a pressure cooker and cook for 4 to 5 whistles.
- Switch off and allow to cool.
- Grind all the cooked ingredients together.
- Add salt to taste.
- Add water to get the required consistency.
- Add chopped coriander and a dash of butter (both optional) and enjoy your soup warm.
