Black Urad Dal Rice/Karuppu Ulundhu Sadham

Black urad dal rice, or karuppu ulundhu sadham in Tamil, is a traditional and authentic recipe from the Thirunelveli district of Tamil Nadu. It is a very flavourful and protein-packed dish that can be made very easily and quickly.
Ingredients
- Rice/Raw rice – 1 cup
- Split black urad dal – ½ cup
- Garlic cloves, peeled – 8-10
- Fenugreek seeds – ¼ tsp.
- Cumin seeds – 1/2 tsp.
- Grated coconut – 4 tbsp.
- Asafoetida – 1/4 tsp.
- Water – 3½ cups
- Salt as per individual taste
For Tempering:
- Gingelly oil – 1 tbsp.
- Green chillies as per taste
- Cumin seeds – 1 tsp.
- A few curry leaves
Method
- Add the split black urad dal to a pan and dry roast it until a nice aroma emanates. While roasting, keep stirring the dal to prevent it from burning.
- Switch off the stove.
- Now, wash the rice and roasted urad dal together in water. Make sure to wash the mixture at least twice or thrice. Drain the water.
- Add the washed rice and black urad dal to the pressure cooker.
- Add the peeled garlic cloves, fenugreek, cumin, asafoetida, grated coconut and salt.
- Add 3½ cups of water and pressure cook for 4 whistles. Keep aside.
- Heat oil in a tempering pan and add the green chillies, cumin seeds and curry leaves.
- Add this tempered mixture to the pressure-cooked rice dal mixture.
- Mix everything well and serve hot.
