
This broccoli millet microgreens roti is a healthy and delicious twist on the traditional roti. Packed with fresh microgreens and wholesome ingredients, it’s simple to make, nutritious, and perfect for any meal.
Ingredients:
- Millet flour (any millet of choice): 1 cup
- Rice flour: ½ cup
- Roasted gram flour: 1½ tbsp
- Broccoli pieces: 3 or 4
- Green chilli: 1 or 2
- Radish microgreens: a small bunch
- Finely chopped onion: 1
- Salt to taste
- Lukewarm water as needed
- Oil as needed
Method:
- Lightly grind the broccoli, green chilli, and radish microgreens in a mixer.
- In a bowl, combine the millet flour, rice flour, roasted gram flour, and salt.
- Add the finely chopped onion and the ground vegetable mixture to the flour mixture. Mix everything well.
- After mixing, gradually add lukewarm water. Use just enough to make a slightly loose, soft dough.
- Take an unheated non-stick pan. Place a portion of the dough on it and spread it very thinly with wet fingers.
- Make a few small holes in the middle and drizzle a little oil.
- Cover with a lid and cook on the stove. Do not flip it. Cook until the bottom becomes nicely browned and crisp. Serve with coconut chutney.
- If the pan gets too hot, you won’t be able to spread the next roti. Using two pans and alternating between them works well.
Tips:
- The thinner you spread the roti, the crispier and tastier it will be.
- Add a little more oil if you want it extra crispy.
- More finely chopped onion makes it especially tasty.
- Eat it hot and fresh for the best texture.
