Sweet dishes! Something that children and adults alike cannot resist! Furthermore, if the sweet is made of the healthy kavuni rice, there is no reason not to indulge, is there?
As black rice is very hard with high fibre content, it is necessary to wash the rice and soak it in water overnight.
In the morning, the water can be drained and the rice added to a pressure cooker with water in the ratio 1:1.5.
Cook for 3 to 4 whistles and once the pressure has settled down, open the lid.
Transfer contents to a pan and add the freshly grated coconut, sugar, ghee and cardamom to the cooked rice. The mixture will loosen up immediately after adding sugar.
Heat the mixture and stir well until combined. Once the desired consistency has been obtained, transfer to a cup and serve.
Note: The amount of sugar to be added depends on individual preferences. If you want to avoid sugar, you can use jaggery as a substitute.
