One Pot Rasam Rice

This one-pot rasam rice is a very convenient and easy recipe. With ingredients like garlic and cumin, rasam rice is always a go-to when we are confronted with digestive issues.

Ingredients

For Soaking

  • Rice – 3/4th cup
  • Toor dal – 2 tbs

Soak the above for 30 minutes.

For the Crushed Mixture

  • Pepper – 1 tsp
  • Cumin seeds – 1 tsp
  • Curry leaves – 5
  • Dried chillies – 3
  • Garlic – 6

Crush the above ingredients into a coarse mixture. A mixer can be used if a mortar and pestle set is not available.

For the Cooker

  • Oil – 3 tbs
  • Mustard seeds – 1 tsp
  • Curry leaves – 10
  • Dried chillies – 2
  • Tomatoes, chopped – 2 or 3
  • Turmeric powder – 1/2 tsp
  • Rasam powder – 2 tbs
  • Tamarind juice squeezed from a lemon-sized tamarind that has been soaked in 1/4th cup of water
  • Salt – 1 tsp
  • Chopped coriander leaves for garnish

Water for rice – 5 times the rice quantity (3/4th cup × 5 times). Omit/adjust chillies according to individual taste.

Method

  • Add oil to a cooker.
  • Once the oil is heated, add mustard seeds, the crushed mixture, curry leaves and dried chillies and sauté.
  • Add chopped tomatoes and cook until soft and mushy.
  • Add turmeric and rasam powder and mix well.
  • Add tamarind juice.
  • Add soaked dal and rice.
  • Add water, salt and mix well.
  • Close the cooker cap and wait for 4 to 5 whistles.
  • Once cooled down, open and add chopped coriander leaves and mix well.
  • Serve hot with appalam!
