Soya fried rice, more commonly known as soya rice, is a popular alternative to the traditional fried rice, mainly because of its balanced meal offerings. In other words, the carbs from the rice and the protein from the soya make it a well-balanced meal.
Ingredients:
- Cooked rice: 2 cups
- Minced soya chunks: 1 cup (soaked in hot water, squeezed dry, and pulsed in a blender into a mince)
- Vegetables:
- Chopped onions: ½ cup
- Green peas: ½ cup
- Chopped carrots: ½ cup
- Minced garlic: 1 tbsp
- Minced ginger: 1 tbsp
- A handful of chopped spring onions (scallions)
- Soy sauce: 1-2 tbsp
- Red chilli sauce (or ketchup): 1 tbsp
- Black pepper powder and salt to taste
- Cooking oil: 2-3 tbsp
Method:
- Heat oil in a large pan over medium-high heat.
- Add the vegetables. Sauté for 2 to 3 minutes until tender-crisp.
- Add the minced ginger and garlic. Sauté for a minute.
- Add the prepared soya mince to the pan. Stir-fry for 2 minutes so that it absorbs the flavours and warms through.
- Add the soy sauce, chilli sauce, black pepper, and salt.
- Mix everything thoroughly.
- Add the cooked rice and the chopped spring onions to the pan.
- Toss and stir-fry on medium-high heat for 2 to 3 minutes until the rice is evenly heated and coated.
- Taste, adjust the seasoning if needed, and serve hot.
