Thooyamalli Saadam with Keerai Mandi/Thooyamalli Rice with Mashed Spinach

Thooyamalli rice is a traditional rice variety with enormous benefits. It’s known for its high fibre content, which can be beneficial for digestion and blood sugar control. It is also a good source of iron, calcium and potassium and contributes to bone health.

While thooyamalli rice is a carbohydrate source, its lower glycaemic index and higher fibre content make it a healthier option.

Ingredients

  • Thooyamalli rice – 1 cup
  • Greens, chopped (any variety) – 1 bunch
  • Small onions – 8
  • Jeera – 1/2 tsp
  • Red chillies – 4
  • Coconut oil – 1 tsp
  • Rice washed water – 1 cup
  • Salt to taste

Method

For the Rice

  • Wash and soak the rice for half an hour.
  • Cook the rice in water – the ratio of rice to water is 1:2.
  • Once cooked, strain the water and serve.

For the Spinach

  • Add oil to a pan.
  • Add the jeera, onions and red chillies and fry.
  • Add the washed and chopped greens.
  • Pour in the rice water.
  • Allow to cook.
  • Add salt.
  • Close the pan with a lid and cook for 5 minutes.
  • Mash well with a ladle.
  • Serve with rice.
