Thooyamalli Saadam with Keerai Mandi/Thooyamalli Rice with Mashed Spinach

Thooyamalli rice is a traditional rice variety with enormous benefits. It’s known for its high fibre content, which can be beneficial for digestion and blood sugar control. It is also a good source of iron, calcium and potassium and contributes to bone health.
While thooyamalli rice is a carbohydrate source, its lower glycaemic index and higher fibre content make it a healthier option.
Ingredients
- Thooyamalli rice – 1 cup
- Greens, chopped (any variety) – 1 bunch
- Small onions – 8
- Jeera – 1/2 tsp
- Red chillies – 4
- Coconut oil – 1 tsp
- Rice washed water – 1 cup
- Salt to taste

Method
For the Rice
- Wash and soak the rice for half an hour.
- Cook the rice in water – the ratio of rice to water is 1:2.
- Once cooked, strain the water and serve.
For the Spinach
- Add oil to a pan.
- Add the jeera, onions and red chillies and fry.
- Add the washed and chopped greens.
- Pour in the rice water.
- Allow to cook.
- Add salt.
- Close the pan with a lid and cook for 5 minutes.
- Mash well with a ladle.
- Serve with rice.
